Without further delay, honey chicken.
The Checklist.
Sounds delicious? Yup.
Simple ingredients? Yup.
Simple to make? Yes yes yes.
The beginning
I needed something easy to whip up as I have a huge exam (that I should be studying for) and I didn't have time to go grocery shopping. Enter...honey chicken. I had all the ingredients and it took less than 5 minutes to prepare.
I adapted the recipe from this awesome blog and made it even more Kristen-friendly.
The characters
Two large chicken breasts
1/2 cup of honey
1/4 cup of soy sauce
1-2 squirts of ketchup
1 garlic clove, minced
1 small onion, diced
* Optional: Red pepper flakes (I put in a lot :) )
Starting to look too familiar...
Waiting patiently...
The original recipe didn't call for one whole onion, but I really like onion so I figured what the heck.
I learned that if you spray your crock pot with some cooking spray before hand, it's an easier clean up, so first spray your crock pot before placing the two chicken breasts down. I seasoned them with a little bit of salt and pepper. Mix the rest of the ingredients in a small bowl, then dump it on top of the chicken. Cook on low for 3-4 hours (my chicken was still partly frozen when I put it in the crock pot). Shred chicken in crock pot and serve over egg noodles (because if you are like me, you are sick of freaking rice).
Salt and pepper those bad boys.
Dump all the ingredients in...
Stir stir stir...
Pour over chicken and wait....
The conclusion
Absolutely delicious. Definitely my favorite crock pot recipe to date. I did add a few teaspoons of corn starch to thicken up the sauce, but I think it could have used some more. The sauce was very liquidy, but went excellent with the egg noodles.
Red pepper flakes are really hot.
