Not-So-Chilly-Day Sweet Potato Chili

So I guess I got a bit ahead of myself when I talked about having cold weather. It's a nice 72 degrees here in the city of brotherly love... in the middle of November. That didn't stop me though from employing my crock pot to make sweet potato chili.


The Check List.
Is it chili? Yes. 


The beginning
I love all things chili. The restaurant below me sells chili on really cold days and if it weren't for the sad state of my wallet, I would get it. Every day. I found this recipe on this blog and knew I had to try it. My crock pot was not big enough to add a pound of turkey, so this variation is vegetarian. 

The characters
2 sweet potatoes, chopped into 1-inch pieces 
1 onion, chopped
2 cloves of garlic, minced
2 15-oz cans of diced tomatoes
1 28-oz can of crushed tomatoes
1 15-oz can of kidney beans
1 15-oz can of white beans
2 tbs of brown sugar
Salt, pepper, paprika, chili powder, garlic powder, and red pepper flakes to taste
1 pound of ground turkey*

Super easy, right? 

The plot
This is almost too easy. Add your chopped your vegetables to the crock pot. Dump beans and tomatoes and spices, stir. If you want to add ground turkey, add in chunks. There is no need to brown it, it will cook. Cook on low for 10 hours. Serve with rice or corn bread.

The conclusion
Wow wow wow. I was unsure of this recipe because when I went to add the ground turkey, my crock pot was wayyyy too small. But this vegetarian version was nothing short of amazing. It was delicious and hearty and I have days worth of leftovers. You need to make this. I suggest cubing cheddar cheese and adding it to the chili right before serving. 

Moral of the story
No matter the weather, Chili will always be winter food.
