Honey, I'm a Snicker Doodle

My Christmas cookie baking series continues as I finish up my second-to-last grad quarter, study for a certification exam, and attempt to carry on my mother's tradition of cookie platters. 

Today's baking escapade is one of my personal favorites and is making its first debut on a Christmas cookie platter: the honey snicker doodle. They are truly one of the most perfect, chewy cookies ever.

These things contain that Christmastime magic that can be enjoyed all year-round. The Fiancé and I brought them once to a picnic where we left early....and I tried to take the leftovers home with me....apparently that's a faux-pas. Whatever.

The love affair continues
The beginning
This recipe is actually from a cook book- The Deen Bros. Cookbook ...yes THOSE Deen brothers, as in sons of the butter queen herself, Paula. And you know what makes good cookies? Butter.

The characters
3 1/2 cups of all-purpose flour
1 tablespoon of baking powder
2 teaspoons of baking soda
1/4 teaspoon of salt
1 heaping teaspoon of cinnamon
2 sticks of butter
2 cups of sugar
2 eggs
1 tablespoon of honey
2 1/2 teaspoons of vanilla

For the cinnamon/sugar
6 tablespoons of sugar
1/2 heaping teaspoon of cinnamon

10 ingredients away from pure awesome 
The plot
Preheat your oven to 375. If you're NOT using a baking stone, grease your cookie pans.

Combine your sugar and butter using your KitchenAid or an electric mixer. Once mixed, add your eggs, honey and vanilla. In a separate bowl, combine your dry ingredients and mix well. Add to butter mixture and blend together.

In a separate bowl, add the 6 tablespoons of sugar and 1/2 teaspoon of cinnamon and mix together. Using a cookie scoop or your fingers, form small balls from the dough (less than 1 inch because these suckers spread) and roll around in the sugar/cinnamon mixture. Place on your baking stone or cookie sheet about 2 inches apart, because AGAIN, these cookies SPREAD.
Yeah... I forgot how much these guys spread... 

Bake for about 10-11 minutes and then place on a cooling rack*** SUPER IMPORTANT: these cookies bake FAST. You will most definitely need to readjust your cooking time after each batch.

Makes about 6 dozen cookies.

I first used a cookie scoop, but then started using my fingers because the cookies were coming out too large 
Ideally, you should make the cookies about this size
